Why heloooo there folks! I’m not going to apologise for the long wait because it’s boring to hear the same thing over and over but the reality is I’m using my office time which means I’m juggling work while trying to write a post ssshhh!
The good news is that I am in the process of purchasing a laptop so I will definitely be more dedicated once I have the equipment to write whenever I need to.
Claud will tell you that I am the bad apple in the relationship in terms of the late night munch; evenings are not complete without chocolates, sour worms, wine gums and chips in bed and, of course, Netflix.
To meet him halfway, I found a recipe for Peanut Butter Mocha Energy Bites, super easy to make, it is vegan-friendly and gluten-free. The recipe includes chia seeds which I excluded and it surely wasn’t missed, instead, I used desiccated coconut. I must be honest, I did not weigh or measure the ingredients. If the consistency resembles a texture that can be rolled into a ball (think playdough -ish) then Bob’s your uncle!
I had no freakin clue what the difference was between “rolled oats” and regular oats. The Jungle Oats sachets I had in the cupboard worked more than well enough.
Ingredients:
- ½ cup dates
- 1 cup rolled oats
- ½ cup creamy peanut butter
- ½ cup strong coffee (no sugar)
- ¼ cup honey
- 2 tbsps cocoa powder
- ¼ cup desiccated coconut
Method:
Blend everything together and refrigerate for 20 minutes.
Remove from the fridge, roll into small balls, after which you can roll the balls into coconut or cocoa powder to finish.
Store in the fridge, these should last for 1 week.
CAUTION: These balls are yuuurrrrmmmmmeeeee, you going to want more than one. However, don’t forget coffee is an ingredient so it’s not a good idea to have too many late at night.
Tip: Add the coffee slowly, I didn’t and my mixture was a bit wet, I added more oats and coconut but it was still a bit wet to roll so I placed it in the freezer for about 20 minutes.
