A few weekends ago I had a surf and turf meal in mind and with Claud having the steaks ready to go I decided to add calamari with a tartar sauce as my contribution to the Saturday summer afternoon lunch.
Let me be honest and say the calamari didn’t work out as planned. I don’t know why, I searched and read up on so many recipes but in spite of this, the crumbs would simply not stick to the calamari rings. I dunked them in egg and then into the flour, spice and panko breadcrumb mixture but it just wouldn’t stick! Frustrating, to tell you the least. If you know what went wrong let me know? Or how do you make crumbed calamari?
Nevertheless, I made a tartar sauce to accompany the calamari, which we ate and it was yummy. The recipe for the tartar sauce I found on Pinterest; I abandoned the capers which are meant to be included, only because I’m not too keen on these spicy little buds. A friend told me fried capers are a lot tastier so I will try this sometime soon and give you my feedback.
The below is enough tartar sauce for about 2 – 3 people; you can amend the quantities as needed and remember to taste as you go along.
- 2 tbs mayonnaise
- 2 tsp mustard
- 4 tbs plain yoghurt
- Juice of ½ lemon
- ¼ diced red onion
- Chopped parsley
- Chopped chives
- 1 large gherkin diced
- Salt and pepper to taste
Mix all the ingredients together serve!
